Ingredients | 1 cup already cooked rice 3 eggs 1/2 onion 1 or 2 carrots 2 sausage (or similar) 1/2 cup peas oil/butter |
Directions | Start with already cooked and cooled rice. Separate the egg whites and yokes - mix the yokes only into the rice until evenly coated. Cook the peas in boiling water for 3 minutes then set aside. Dice small the onion, carrot, sausage and set aside. In a pan (or better wok) with some oil or butter, cook the onion and carrot first on medium heat for a few minutes. Then add the sausage and peas. You can add salt and pepper to taste. Let this all cook/heat up on medium heat. Then put it aside. Next put the rice in the pan on its own, and cook it for two minutes on medium heat, stirring costantly. Next pour in the egg whites, and stir and cook on medium to low heat. You don't want it to cook too fast, but you do want little ribbony bits of egg white mixed in with the rice. Add the rest of the previously cooked ingredients, and mix in until all cooked nicely. |
Notes | White rice works well. You don't want it too starchy, so make sure when preparing the rice you soaked it to rinse of the extra starch. Things to try: * Different oils (sesseme is good, butter is good, maybe other things are good?) * Adding seasoning during cooking (soy sauce, fish sauce, other?) * Cooking in a wok vs a western pan |
