Ingredients | 1 cup warm water 3 tbsp warm milk 2 tsp yeast 2 1/2 tbsp sugar 1 egg 3 1/3 cups all-purpose flour 1 tsp salt 2 1/2 tbsp butter egg for wash |
Directions | Stir together warm water, milk, sugar and yeast. Let stand ten minutes, until it's foamy. Sift together flour and salt. Cut butter into flour to resemble meal. Using dough hook in a stand mixer, stir in yeast mixture and one egg. Mix (knead) until dough forms, 5-8 minutes. Remove bowl from mixer and form dough into a ball. Cover and let rise until doubled. Punch dough down and divide into 8 equal parts. Form into buns by rolling, pinching, and then flattening into discs about 10cm across. Arrange on a baking pan or sheet with 5-8cm between each bun. Cover and let rise until doubled again. Preheat oven to 400 degrees. Put a oven safe pot or cast iron pan on oven floor, this will hold water to steam the buns while they bake. Brush buns with egg wash and sprinkle with sesame seeds if desired. Put 1/2 cup water into the pan in the oven. Bake buns for 15-20 minutes until golden brown, then transfer to a wire rack to cool. |
Notes | Original recipe had a bunch of weird steps, like beating the egg before tossing it into the mixer, and using unsalted butter and more salt. I don't know why. These turned out fine. I substituted one cup whole wheat flour for white and they came out great. |
