Ingredients | 3 cups flour 2 tsp baking powder 3/4 tsp salt 1 cup warm water |
Directions | Stir together flour, baking powder and salt. Gradually stir in enough warm water to form a crumbly dough, then work dough with your hands till it holds together. Turn out onto a broad and knead till smooth. Divide into 12 pieces and shape each into a smooth ball. Cover and let rest 15 minutes. For each tortilla, flatten one ball into a 4-5 inch patty, then roll 9 inches round, roll from center to edges. Place on preheated dry frying pan at about 375 degrees F. Almost immediately tiny blisters should appear. Turn and press with a spatula around the top, turn and press once again, repeat till golden brown. Wrap in a towel. |
Notes | These make small tortillas, and the dough is generally easier to work than other recipes I have seen. |
