Ingredients | beans 3/4 parts salt pork 1/4 parts (or bacon, or good cut of not-too fatty meat) 1/2 cup onion 2 Tbs dry mustard 1/4 tsp pepper 1/2 Cup real Maple Syrup (or 1 cup Barbados or light molasses) |
Directions | Soak beans overnight. Can be any kind of bean, although kidney is traditional. Toss the water and boil the beans in new water (approx 1 hour), let cook until soft enough to eat. They will not soften any further, so get them the consistency you want. Drain beans and transfer to final cooking pot. Add all ingredients together and mix. Top with water till covered. Bake in an over at 250 degrees F for 4 to 8 hours. Make sure to check every couple of hours to top up with water as needed so they don't dry out. The cooking time depends on when you are ready to eat, and if they are to your liking yet. |
