Ingredients | 1 and 1/2 heads of broccoli 1/4 cup of onion or scallion or leek 2 garlic cloves 2/3 cup shredded cheese 2/3 cup bread crumbs 2 eggs salt + pepper |
Directions | Preheat oven to 400 degrees Boil a pot of water with salt in it (to make it boil hot). Once boiling, put in broccoli for 2 minutes (in other words blanch the broccoli). Drain from the water and stop the cooking by running cold water over them in a colander. Chop finely the garlic, onion and the now lightly-cooked broccoli, and add to a bowl. Add all other ingredients to the bowl. Using your hands, mix everything together completely - you should be able to form the mix into balls or cylindrical tater-tot kind of shapes, whatever you like. Grease a baking sheet of some kind and place your balls/tots on it, bake for 8-9 minutes, the flip them and bake another 8-9 minutes. They should be golden brown. |
Notes | Suggestions for modifications include changing the main veggie (cauliflower? Mix in some fine cabbage?) or also playing with the spices - some sriracha would probably be good! |
