Ingredients | Bottom Layer ~~~~~~~~~~~~~~~~~~~~~ 1/2 cup of unsalted butter 1/4 cup of white sugar 5 tablespoons of cocoa 1 egg, beaten 1 3/4 cups of graham cracker crumbs optional - 1/2 cup of finly chopped almonds or walnuts 1 cup of fine unsweetened coconut Middle Layer ~~~~~~~~~~ 1/2 cup of unsalted butter 2 tablespoons and 2 teaspoons of cream 2 tablespoons of vanilla custard powder (brand name "Bird's") 2 cups of icing sugar Top Layer ~~~~~~~~~~~ 8 one-ounce squares of semi-sweet chocolate 2 tablespoons of unsalted butter |
Directions | Melt the butter, sugar, and cocoa in the top of a double boiler over simmering water. Add the egg and stir to cook and thicken. Remove from heat. Stir crumbs, coconut, and nuts into the mixture, press firmly into an un-greased 8x8 pan. In another bowl, cream all of the middle layer ingredients together. Beat until light. Spread over the bottom layer in the 8x8 pan. Melt the chocolate with butter over low heat. Cool, but while still liquid, pour over the second layer and chill in the fridge. |
Notes | Do not substitute margarine for butter in this recipe. If you do, the bar D won't solidify. Failed Nanaimo bars can be used for a pretty good cheesecake. One package of Baker's chocolate is 8oz. |
