Ingredients | 2 1/2 cups of flour 1 1/2 cups of sugar 2 teaspoons of baking powder 1/2 cup of margarine 2 eggs 1 1/4 cup of milk 1 teaspoon of vanilla Crumb Topping ~~~~~~~~~~~~~ 1 cup of flour 3/4 cup of sugar 1/2 teaspoon of baking powder 1/4 cup of margarine |
Directions | Mix all the dry goods with a fork, then use a pastry cutter to cut in the margarine. Beat the eggs and add milk and vanilla. Add to the flour mix and stir until blended. Pour it into a 9x13" pan and spread it with a spatula. Make crumb topping by sifting together flour, sugar and baking powder, then cutting in the margarine. Top with fruit and additional crumb topping (made as above). Bake at 375 F for 35 minutes, or until knife comes out clean. |
Notes | We used butter instead of margarine. I topped with some dried apple that had been soaked overnight. Berries will also work. Chop some nuts into the topping for variety or flavor balance (walnuts might balance a sweet fruit) |
