Ingredients1 green pepper cut into strips
1 coarsely chopped medium onion
2 tablespoons olive oil
1 teaspoon powdered ginger
1 tablespoon brown sugar
1 tablespoon so sauce
1/4 cup vinegar
2 1/2 cups of pineapple bits in juice
1 tablespoon corn starch
1 to 1 1/2 pounds of cod fillets
DirectionsSaute green pepper and onion in oil for 5 minutes. Add ginger and all other ingredients except the fish. Cook, stirring to blend and thicken. Arrange fillets in a shallow backing dish. Salt and pepper. Pour on the sauce and bake at 350 degrees for 30 minutes.
