Ingredients | ~* Cake *~ 2 1/4 Cups Flour 1 2/3 Cups Sugar 2/3 Cups Cocoa 1 1/4 tsp. Soda 1 tsp. Salt 1 1/4 Cups Water 3/4 Cups Shortening 2 Eggs 1 tsp. Vanilla ~* Topping *~ 1 1/2 Cup Chilled Whipping Cream 1/4 Cup Confectioners Sugar ~* Cherry Filling *~ 2 tbs. Cornstarch 2 tbs. Sugar 1 can of Cherries 1 tbs. Brandy Flavour |
Directions | Grease two 2 9" Round pans. Measure all cake ingredients and blend for half a minute at low speed, then for three minutes at high speed. Bake in a 350 degree oven for 30 - 35 minutes. In a chilled bowl, beat the cream and sugar for the topping until stiff. For the cherry filling, stir the cornstarch and sugar, then add brandy, water and cherry juice (about 1 cup). Cook on the stove until thick. Cut up and add the cherries. On the first layer of the cake, form a rim with the cream. Fill with the cherry filling. Put the top layer on. Spread the top layer and sides of cake tower with remaining whipped cream. Top with remaining cherries. Put some chocolate shavings on for snazzyness. |
