Ingredients | Pie Crust (top and bottom) 1 chopped Onion 1 Red Pepper 2 Bags (lots) of Spinach 1/2 lb sliced Ham 1 lb Mozzarella Cheese 1 clove Garlic 1 Tbs Butter 7 Eggs |
Directions | Sauté onions and garlic in butter. Add spinach and cook till wilted. Roll out pastry into pie plate, with enough overhanging the edge. Layer 1.2 ham, 1/2 cheese, 1/2 spinach, 1/2 chopped pepper. Beat 6 eggs and pour over the layer. Repeat the layer system described above. Cover with pastry top. seal the edges by brushing with the remaining beaten egg. Bake at 400 degrees for 45 min. |
Notes | This is one of those awesome picnic pies, where you cook it then wrap it in a towel and serve. It is also awesome served cold. My mom often substitutes deli chicken or fake ham for the real deal. It still works out goodly. |
