2 - 250g pkg hard cream cheese
2/3 cup sugar
1/2 tsp cinnamon
1/4 tsp powdered ginger
1/4 tsp nutmeg
1 cup cooked pumpkin
1/4 cup sour cream
4 large eggs
3/4 cup graham cracker crumbs
3 tbsp brown sugar
3 tbsp melted butter
|Directions||Preheat oven to 300 F. Mix crust ingredients and pack into bottom / sides of 9" springform pan.|
Whip cream cheese until smooth. Add sugar. Add spices, pumpkin, sour cream and eggs. Mix until smooth. Pour onto crust and bake 60 minutes.
Cool on rack, then refridgerate before removing from pan. Garnish with whipped cream and pecans.
|Notes||Check cake at 45 minutes. If edges are firm but center still "wobbly", shorten cooking time by 5 minutes.|
Substitute 1 tsp crushed fresh ginger (in garlic press) for 1/4 tsp powdered ginger.
